What is the difference between Custom Order Beef Shares and Standard Beef Shares
With Custom Order Beef Shares you get to customize your order by choosing:
steak thickness, roast size, and any specialty cuts you want such as prime rib, pre-made patties, and organ cuts
Our next custom order date is August 2024.
Our Standard Beef Shares are not customizable. However, do offer a great assortment of our premium beef cuts.

How much will my Custom Order Beef Share cost?
When you purchase a Custom Order Beef Share, you will pay a small deposit to reserve your order. The total cost of your custom quarter, half, or whole bulk beef share depends on the size of your animal. Your cost will vary slightly based on the weight of your animal.
Current Hanging Weight Price: $3.50 per lb.
The prices below are Average Beef Costs
Quarter Beef: $750 + locker processing fees
Half Beef: $1,500 + locker processing fees
Whole Beef: $3,000 + locker processing fees
What is the total weight of beef from an order?
When our beef is taken in for processing, a whole beef will average 1,400 lbs. We can expect an average yield of 60-65% or 865 lbs. for the carcass hanging weight.
An 865 lb. carcass hanging weight will yield approximately 60% or 520 lbs. of beef to fill your freezer.
The majority of carcass yield loss comes from 2 factors: water loss and bone loss. Water loss occurs during the dry aging process when the beef hangs for 14 days to tenderize. The second yield loss comes from cutting the meat off the bones. Therefore, the more boneless cuts the customer requests equals less average take-home weight. Customers that do not request marrow, knuckle bones, and organs should expect a lower take-home weight.
How do I reserve my Custom Order Beef?
When you purchase custom beef shares from Neville Farms, you will have two costs: the beef and the meat locker processing fees.
The customer's partial non-refundable deposit is due at the time of your order.
Payment Schedule for Custom Beef Orders:
Deposit: The deposit is due the day you reserve your Custom Order Beef Share.
Remaining Balance: Payment for your beef is due to Neville Farms. Your final payment for your beef is determined by the weight of your animal and will be determined on the day your beef is taken to the meat processor. Once we deliver your animal to the butcher, we’ll email your final invoice.
Your final payment is due to Neville Farms prior to picking up your order from Bittner's Meat Locker. Invoices can be paid via check, cash, or online payment.
Where is my Custom Order Beef Share processed?
Our custom beef share orders are processed at Bittner’s Meat Locker in Eureka, IL. & Rabers Packing Co in Peoria, IL. Our beef is processed the old-fashion way, one animal at a time, so you are guaranteed to get your meat.
Your beef will hang for 10 days to 2 weeks, which helps tenderize the meat. Your cuts will be wrapped in kitchen-grade plastic and labeled butcher paper. Shrink-wrapping is offered at an additional fee. This can be requested when placing your order with the locker.
Once your custom beef order is complete, the locker will contact you to let you know your order is ready for pick-up. The customer is responsible for pick-up.
